Is this the prettiest dish I've ever made? No, it isn't. But what it lacks in looks it more than makes up for it in depth of flavor and comforting, hearty warmth on a cold night. It's also super easy to make-everything just goes in the crockpot-and lasts for days. We served it with a crusty bread for some texture. I used this recipe from Eat, Live, Run, with some changes.
Total time to cook: six hours
Makes eight servings
Ingredients:
4 large carrots, peeled and sliced
1 medium white onion, chopped
2 large sweet potatoes, peeled and cut into one-inch cubes
1.5 cups chopped green beans (piece should be about one-inch)
2 cups green lentils
1 bay leaf
1 tsp dried oregano
5 cloves garlic, minced
1 15 oz. can diced tomatoes
64 oz. vegetable broth
1 tsp. black pepper
Steps:
- Combined all of the ingredients in the crockpot.
- Cook on high for five hours. Don't forget to take out the the bay leaf before serving.
